The Sun Honey Mojito

The syrup (make separately - 10 drinks worth) - 250ml still water - equal amount of demerara sugar - 10 mint leaves - 4 tbl runny honey - juice of 1 lime and bring to the boil in a pan. Take it off the heat and let it cool. Once cooled strain and bottle this to keep. The Mojito: Take a shaker and add: - 50ml Sun Rum - juice of one lime - 10 mint leaves. - 25ml sugar syrup and muddle together Fill half with cubed ice and shake for 10 secs. Fill tall glass 2/3 with crushed ice, strain and pour mixture over. Top up with soda water and garnish with mint leaves and a lime wedge.
